Owner and Proprietor Peter Dent has been the driving force behind Adobo Catering since 1992. Peter started in the food and hospitality business in 1980, when he worked at Dean and DeLuca retail food merchandising company of New York. During this time he was also in the Stagier Program Peter Kump's New York Cooking School. Before relocating to Santa Fe, Peter kicked off his independent career in catering by opening the soon to be acclaimed Peter Dent Food and Catering Shop in Tribeca, New York. With his combined extensive experience in both cuisine and developing strong client relationships, Peter has perpetuated business for Adobo Catering and has earned high accolades from clients, staff and the community.
Chef Alain draws inspiration from a diversity of regional cooking styles from around the world, but what gets his creative juices flowing is to improvise with the best ingredients at hand (and that hand has a mighty reach). His distinct, warm style is reflected in meals that encourage hospitality and leisure at the table, the elemental enjoyment of eating and drinking well.
